I have some great news to share with you!
Based on feedback that you and other teachers shared with our team, Khan Academy has just launched a new feature that will allow you to edit multiple assignments at once! We know that things are constantly changing in the classroom, and we wanted to make it easier for you to adjust coursework when you need to!
In addition to that feature, we’ve added the ability to schedule assignments for a future date and time. We hope you will enjoy these new features, and we welcome any feedback you have about them.
Most importantly, we want to thank you for taking the time to share your feedback to help make Khan Academy a better learning resource for everyone. We take all feedback to heart and appreciate you sharing your ideas with us.

There currently is not a way to change the due dates of multiple assignments at the same time. I don't understand why Khan Academy hasn't created this option yet. I've been searching for how to change due dates on multiple assignments with my classes, and am saddened to see that for over two years, Khan has been getting this request from users, but still has not found a solution to allow this possibility.
I'm sure you are in continuous product development discussions, and I hope that this simple request makes its way to the top.
