It is not currently possible to create assignments without a due date, but I've passed this request on to the team for them to review!
As a possible workaround, you could set the due date for the assignments far into the future, which would essentially mimic having no due date. I know this can be tedious if you're planning on creating lots of assignments. However, as long as you use the bulk assign feature to assign more than one piece of content at a time, you'll only have to set the due date once and it will automatically be applied to all of the assignments.
