I know how to assign something to everyone in my class. I want to assign an easier module to just one or two students in my class. For example, I want 26 students to be working on an 8th grade module and i want 2 students to be working on a 7th grade module. How do I assign a 7th grade module to only those 2 students.

To assign 7th grade content to a few students, you'll first need to add the 7th grade course to your list of subjects in your class. To do this, visit your class settings and click "Change course" to add the 7th grade course.
You will then be able to see the 7th grade content under the "Assign content" page. When you go to assign the content, uncheck the "Check all" box and then select the checkboxes next to the specific students' names that are to receive the assignment.

It looks like there are no students in the class that you are trying to create an assignment for. In this case, the assignment will automatically be given to all new students that join the class before the assignment due date.
If you want to assign content to individual students, you will have to add the student accounts to your class first.
