Hi Mark,
To enter a mixed number on the mobile app, you'll need to press and hold the fraction button. You should then see a new mixed number button appear above the fraction button. You can then slide your finger up to the mixed number button and release, which should allow you to type a mixed number.

Mark White, here's how I do it. It's non-intuitive, but it works for me.
1. Select the fraction button first. This is the one that has one box on top of the other.
2. Type the numerator of the fraction, 21 in this case, in the top box and the denominator, 100, in the bottom box.
3. Put the cursor at the beginning of the answer box, in front of the fraction.
4. Then type the whole number portion, 8.
It's been a while, so I don't remember if a space needs to go between the whole number and the fraction. I don't think it does, though.
I have never tried the method suggested by Evan Lewis, but I have found that any time finger sliding needs to be done in the iPad app, it only gets done successfully about 10% of the time for me.

Thanks everyone. I was beating my head against a wall trying to do this. It’s a matter of holding down the divisor key until the mixed divisor key pops up, then moving to the mixed divisor key before lifting your finger. Then putting in the numerator of the second figure.Then tapping where you want to put the divisor and entering it. Not very intuitive.
