Thanks for the feedback! I've forwarded this to the team to consider as we plan for future versions of the mobile app.
In the meantime, if you wish to listen to something else while working on the practice exercises, I suggest using the desktop version of the site instead. On the desktop version you can disable sound effects via your Account Settings.

Benjamin Kaiser if you are using the iPad app, you only had to wait 5 days from the time of your request. I had to wait 746. I just found a new version of Khan Academy in the App Store that allows this to be done. I have put step-by-step instructions on how to find the setting in the app in another post here.

One thing, though - it was apparently released to the App Store 6 days ago (which would have been even before you posted here). But I didn't upgrade my iPad to version 13 of the operating system until early today. So it may be that this version, with the mute button equivalent, may only be available to iPadOS/iOS 13 and above users.
Also, if you are using the Android app, it's still not available there. I'm not sure about iPhone now that iPad and iPhone have different operating systems.
