Completely confused by 3 calculus sequences…which is the most complete and rigorous ?

You can start in that order AP Calculus, Calculus 1 and 2, and then Differential and integral calculus. 

AP Calculus: Usually high school level to the beginning of college (freshman year). It covers essential concepts like limits, derivatives, and integrals, but lacks the breadth and theoretical foundation of college courses. Since you have a physics degree you probably know this already, and I wouldn't suggest it.

Calculus 1: It is college level and it includes functions limits and differentiation.

Calculus 2: It is college level and it includes integration and sequences and series.

Differential and integral calculus: It is college level and it all topics from Calculus 1 and 2.

So, I would suggest the most rigorous should be to start with Calculus 1 and 2 and then follow Differential and integral calculus.

Calculus I and Calculus II do cover more content that AP Calculus, but only like 5 more skills for some reason. I wouldn't recommended taking the differential calculus and integral calculus courses by themselves unless you're really looking to brsuh up on one of those specific types of calculus. Those two courses pretty much over exactly the same content as in Calculus I and Calculus II, the order of which the content is covered definitely makes more sense in Calculus I and Caluclus II. You would typically take Calculus I 1st semester, Calculus II 2nd semester, and Multivariable Calculus/Calculus III, Differential Equations, and Linear Algebra simultaneously in the 3rd semester.
