I don't see anywhere the grade levels for the subjects offered other than math. We are homeschoolers and have no experience using Khan Academy. I have a son that wants to do an anatomy course for 11th grade but I can't find anywhere in the Health and Medicine section that states what grade level the human anatomy and physiology is. Does anyone know how to find out?

I don't think the Anatomy and physiology section is perfectly aligned with a grade level, except that it is high school relevant. Most Anatomy and physiology on that level require a lab course which Khan Academy cannot offer. Some High schools do user the Anatomy and physiology videos from Khan Academy, but if they do it's selected videos, or as "resources you might want to check out". There is usually a text book which is the main source.
I suggest that's how your son uses the Khan Academy videos too. Find a relevant text book, read it, use the key words to check out relevant KA videos. Note the differences, if any, on how the material is treated (in greater or lesser depth).
If you haven't become part of a Homeschooling community yet that's probably something you should consider, as someone else there may have already gone through the same process.
