Ability to choose a date that's not an SAT exam date for SAT Prep Class?

We are looking to offer a semester long SAT Prep class using Khan next fall. I am not sure how to handle it if a student is planning to take the SAT in October. Their study plan would end in October, but the class would continue until January.

I was thinking maybe having the student choose the October test date, complete that study plan as suggested by KA, then after the exam is done, choose a later test date to get a new study plan to complete the course for high school credit.
