After you assign work you can print the "manage" page or even "score" page. Those will have all the assignments you assigned. 

It would be nice to have a checklist of skills and assignments that have already been worked through. My workaround for this is to screen print the course with all of the modules open. I cross off when we have completed it as to not re-assign it again. Our math has a spiraling component and sometimes it is tricky to know/remember if you have assigned a skill or not.

At this time, Khan Academy doesn't have a way to print out an overview of each course's skills. The suggestion from the previous post to take a screenshot of the course overview page is a good workaround.
