If you assign, it has a deadline.  But what I've done for things I want to give as optional work is to assign using a date that I tell the students mean optional.  Or you could tell them anything due on any date at 1:23 or whatever is optional if you want to maintain the date.  For my class, anything "due" June 1 was optional since that was after the school year.
