Your concern about Google in China is legitimate. Said that, you should add a second e-mail to your account. So, you will be able to login your account using this additional email if the Google login doesn't work.

Hi Jeffrey,

Due to China's internet filters, you may not be able to sign in with your Google account while in China. However, you should be able to use your Khan Academy username and password to sign in while you are abroad. To set/change your username or password, please visit your Account Settings.

Make sure that your account has a username listed, and that you know the password. If you forget the password, you'll need to be able to access your email to reset it (which you may be unable to do).
