Hi Spencer -- you can click on "Students" from your Coach dashboard (or on "Roster" after you've selected any particular class), you'll be able to select individual students to remove from your coaching list -- it's an "Action" you can choose (either "Remove from class" or "Stop coaching"):
If you have a ton of students from last year you want to release, it's important to know that the top square, right under the "Actions" pull-down, is a "Select All" -- it really should be labeled as such.

If I understand you correctly, you want to remove a student that you have been coaching? (I do this every summer as I prepare for my new group of students.)
If this is the case: Go to one of your classes. Select the "Roster" option. Over on the right hand side is a checkbox across from each student's name. You may select any or all of the students in the class. (The checkbox above the first student's name will select them all.) Then go up (still on the right just above the names) to "Actions". Select that and you can "Stop Coaching" from there.
