Unfortunately, there is not a way to reset your progress in a course. This is intentional in order to prevent accidental progress loss.
If you're coming back after a period of inactivity, then I suggest creating a new account or a child account to start fresh.
Additionally, with Khan Academy's mastery-based learning system, you can redo all of the course content as many times as you need! There are no limits for how many times you can watch a video or complete an exercise, quiz, unit test, etc. You just won't be able to mark it as not completed or reset your mastery progress.

I tried to delete my account and make a new one but it said an account existed with my details. I thought I waited long enough for it to be deleted. Can I reuse my previous details? I don't want to create a new email address just to use Khan Academy. Thanks.
P.s. I'm trying to delete and create a new account so my progress is effectively reset.

Same! I wish I could reset my progress on course challenges. There really should be a way to do so.
