Will my course level reset to zero if my streak ends?

Nope!
A streak ending has no impact on your total skill points earned/your Total or Course Level.
Those skills points were earned and cannot be taken away by a streak ending.
However, you can lose a skill point if you level down a previously Proficient skill.
