My school is making the deadline for submitting work Noon on Wednesday (6/17). How do I insure that students won't submit work after this date as I go through my grading? Basically, I need the data of students' work to remain on Khan, but I need to make sure no more assignments are completed after 12:00 Noon. I can't figure out how to do this.

Unfortunately, it is not possible to prevent students from completing the assignments once they are late. However, every assignment that is completed after the due date is going to be marked as "late", so you will know when this happens.
Also, a second possibility would be for you to delete the assignments once the date is due, registering manually the students who completed it on time.
