My courses have been set up for my students. The money unit in 2nd grade, however, uses American dollars rather than Australian dollars. My country is set to Australia in the setting. Are there any other settings I missed?

I believe that this is a fantastic idea! Please submit a support ticket to suggest this to the team; I genuinely am surprised this isn't a thing already.
I think this hasn't been added because Khan Academy will have to refilm (or maybe edit) all their currency videos. It may not take too much time for one country, but it will take a lot of time for all English-speaking countries. I still think they should add different currencies, but I don't think they have enough workers to do so.
