Am a teacher, if I want to control a students' accounts, is it better to have students log in with google account or should I create accounts. I want to be able to assign specific videos and receive updates.

I like to have my students create their own accounts. Once they've done that, you can show them how to add you as a coach.
These are the benefits to doing it this way:
At back to school night, I pass out an article I wrote that describes how parents can create their own account and track their child's progress. I also share tips where the parents can work through the same mission as their child. Not many parents do it, but some cousins and siblings have.
Keep in mind: I work with Middle School and High School kids. It might be beneficial to send home instructions for parents to create the account for the child rather than having the child do it on their own.

I don't think there's a right or wrong answer for all teachers.
For younger students who have Google accounts through their school, I think it's simpler to just use those accounts. You can edit their names from your teacher view so you don't have to remember their arcane email addresses. This will likely ease the path through any Internet-blocking systems your school might have.
For older students who have their own email accounts, it might be easier to let them use those. If they leave your school district, they'd keep their account on Khan and all their progress, which is nice.
And I have to say that I've created "child accounts" for temporary purposes (for instance, when a group of students wanted to be a part of a contest where they re-do their entire grade level). I usually delete those shortly afterward.
In any case, you should be able to assign specific videos and skills to any student that has added you as a Coach and that you have put in a Class that you have created. If you need any help with that part, read up here (or just ask me a question):
