I'm a former teacher and also found it challenging to keep track of assignments given to my students when using Khan Academy.
I found that paying careful attention to the due date selected for each assignment helped me keep tabs on assignments. There is a filter in the scores report where you can filter out all assignments except for those due within 7 days or Due today.
Also, depending on how you are using Khan Academy, I'd definitely recommend taking a look at setting Course Mastery goals for your students. Doing this really made it easier for my students to know what to work on and for me to see their progress on specific skills.

Okay - If you are having trouble with what is assigned, I know a way to help! I am mostly an a's and b's student, but I have never missed an assignment. I suggest getting a planner, with the monthly and daily parts, and if I have an assignment due on Friday, I write it in there. Then, when I have homework time (I am a football and basketball cheerleader, which can have as many as 3 games a week), I look there to see all of my assignments that I have to turn in. I hope this helped you!
