I suggest that you use Report a Problem, found at the top of pages of this Support Community, to the right of the center of the page.
I complained about the removal of this feature plus a few others that got changed when the keypad replaced the handwriting area. (For the most part, the keypad is an improvement.) The response I got was that the changes, including the removal of the undo tool, were done for an “improved user experience”. Huh? What improvement did the removal of the undo tool bring? The only possible one is hitting the undo tool by mistake. But I’d rather live with that one than to work with that clumsy eraser!
Any other iOS users out there, I invite you to also Report a Problem about the removal of the undo tool. Maybe if enough of us complain, it will be brought back!
