There are extra non-"students" called "Not coaching anymore" when I click on a completed assignments. What does that mean?
I noticed there are less students than the number of possible completions in the Manage menu for the Assignment tab. When I clicked on the completed, I see this "Not coaching anymore" instead of a student name. Anyone know what it means?

If you're seeing "Not coaching anymore" instead of their name, then this means that they have removed you as a teacher from their account. You will no longer be able to manage their account, view their future activity, or give them new assignments. If this was a mistake, you can have them rejoin your class using the class code.
For security and privacy reasons, all students are able to remove teachers from their account, in case they were to accidentally join the wrong class, change teachers/schools, etc.
