Disappearing courses, Teacher Dashboard

I'm trying to save one day's assignments ahead, then assign the night before and use that night to save the next night's assignments.  The student gets overwhelmed if she sees more than one day's assignments, even if the due date is not immediate.  Anyway, Grammar keeps disappearing.  Is this happening to anyone else?
