How long to complete assignments?

I am setting up some tutoring for some of my students before we go back to school in February. I don't want to assign everything at once. Is there a way to get an idea of how long it will take to complete assignments to know how much to assign per day? I know it will vary by student, but I am just trying to get a general idea.
