How to derive a function from a graph ? Say for example I collected a set of data points every time I run on a tread mill. For every time I stomp on the tread mill I will record the time delay between my previous stomp to the new one and I will collect this information for a period of fifteen minutes and I will plot this. Once I have these values plotted how do I create a function out of this graph ?

Look at the graph. Does it resemble a graph type you know? You have to be able to recognize typical curves for polynomials. If yes, use curve fitting methods for that type of graph.

If no,ask yourself if such a curve gives meaningful information. It could be the measuring equipment is very inaccurate, or zonks out occasionally, or that the data input is not really suitable for such curves. You could be tracking completely random events, although your example should not be that. Your series of measurements might still be flawed in the sense not giving the expected curve if you tripped, had a pebble in your shoe that you sometimes managed to push to the tip and sometimes tread on.
Curve fitting methods require tedious calculations and are rarely done by hand!
