I have twins and I want them to be able to work at their own pace and both be able to do the courses individually. I set them up each an account but how do I assign them things? When I go to the top/Courses/Math, for example, when one completes an exercise, it shows up on the others as progress completed. It's as if what one does, the others account gets credit for.

It sounds like they might be logged into the same account. Can you verify that they are both logging into their own child account? Like Christine said, this may particularly be an issue if they are sharing a device, especially if using the Google sign-in option.
If you'd like to assign them specific content, I suggest using the classroom/teacher features. To do this, you'll need to visit the Teacher Dashboard and create a class for your children to join. You can then create assignments for them, and view their mastery progress. If you haven't used the classroom features before, I suggest looking over these resources.
