I am a middle school math educator. I have been using Khan Academy for just about 10 years and am so glad that you have found Khan Academy useful.

It is a wonderful resource and as such can be used how you best see fit. Right now, with the Coronavirus, we are under unique times but as a practice I usually tell my students that they may only complete the quiz one time. I show them how I can be notified of their attempts. This is a practice that has been implemented in my classroom since the beginning of the school year and students are very familiar with the format. I view the goal of the "quiz",even though it is called a quiz, to be a practice of various skills pulled from multiple exercises rather than just one particular skill and not necessarily a test of sorts. My overall tip would be to use the program in the way that it will BENEFIT your students the most.

There is not currently a way to restrict students from attempting a quiz or unit test more than once. At Khan Academy, we encourage self-paced learning and want to promote a growth mindset where students see repetitive practice as a way of growing and improving their skills.

However, I definitely understand how limiting quiz/unit attempts can be useful in a traditional classroom for grading/assessment purposes. While there isn't a way to prevent students from using multiple attempts, you can view the number of attempts that students have used on a quiz or unit test from the assignment report. If you tell your students to only use one attempt, you can then verify that they have done this from the assignment report.
