I'm afraid there's not a way to choose the number of questions per assignment, and the number of questions for each exercise/course varies depending on the difficulty of the skill and the size of the question bank.
However, one way that you can give your students additional practice questions is to have them complete the assigned exercise more than once. When creating the assignment, make sure to select "Different question set for each student" to ensure that students receive different questions for each attempt. Then, if you go to the "Manage" section under "Assignments" in your class, you can click on the "Completed" column to see how many times each student completed the exercise set. For example, if you wanted students to do 8 exercises, you could instruct them to complete the exercise twice, and then verify they have done this using this report.
However, please note that there's not a way to view their score report for each individual attempt. The Scores tab will show their best score across all attempts, but you can use the Assignment Score Report to view the total number of questions that they completed and the correctness for each question.
