Why are there no clear instructions or videos on how to enroll your child in different courses?

Are you using a computer?  I don't know how it is on an iPad but on a computer I change my courses by:

1) Click on profile name and Learner Home.

2) Go to Courses. There should be an Edit Courses option in the upper-righthand corner.

3) Click on the Edit Courses and choose your courses.  You can pick to up nine courses.

I'm sorry this is so frustrating for you ms m, and I hope this helps a bit. I also suggest looking at Blue-Ice's comment, as they offer a good explanation.

Here might be a few answers to your struggles;

• enrolled course count - You can only be enrolled in 9 different courses at a time, so if your child has all 9 of those spots filled, it cannot add another. 
• Looping back to dashboard - Courses are usually added within the dashboard page, via a popup. From there, you click from the courses available.
• Correct section - Make sure you are on the right part of the dashboard! You should be able to see a category named courses under Stuff.
