I agree 100%! It doesn’t go completely full screen on my Android tablet, too. I love Khan Academy but I do not like this update at all :(

It appears that this is an issue unique to Android tablets. I use Khan Academy mainly on an iPad, but sometimes I use it on an Android phone (Samsung S10). I haven't experienced it, but I did see the screenshot you posted on Google Drive and linked to in your Reddit comment. I agree that it should be fixed, if only to make it consistent with the operation on other mobile devices. (I don't know how the app displays on the iPhone, though.)
Hah! It wouldn't surprise me if Khan Academy did decide to give all of the mobile devices a consistent interface, they would extend this annoyance to the Android phone and the iOS apps.
Here's what you should do. Go into Report a Problem at the top right of the Support Community pages and tell them in a problem report what you posted here and on Reddit. Be sure to attach the screen print that you used in the Reddit post because they would ask you for one anyway.
Also tell them upfront that you do not believe that uninstalling and reinstalling the app, clearing cache, or clearing cookies will work to eliminate this annoyance because the responses in the Reddit community have led you to believe that it is more than just your instance of the app.

Thank you for your reply, Regina. I really appreciate it! I I have submitted an error report as you've instructed. I received an email from the support team just a few minutes after submitting the error report instructing me to post here in the community forum. Here's the response I got from their support team:
"I would also recommend mentioning this in our Discussion Forums where others can add their own thoughts to yours and can vote on your idea. Our team frequently checks these forums to see how we can best help our users, so we would really value your voice here too."
I think you're right, Regina. It seems like this issue only exists on Android as another apple user mentioned in the reddit post that he wasn't experiencing the same issue.

Please respond to their response to you that you have already posted this in their "Discussion Forum". Darn, I forgot that this is sometimes their response. They don't frequently check these forums, or at least they don't make us aware that they're doing so by commenting specifically on what is being said. Sometimes they will post a canned response in the forums, which is less than useless.
As I said, please let them know that it was already posted here, and that someone there (me) advised you to report this via Report a Problem.
After all, if this was done inadvertently in the Android tablet app, it needs to be corrected. And if they want their app platforms to be consistent, well, at least two other such platforms are done the way you'd like the Android tablet app done.

I let them know I created the post and this is what they said:
"Thank you for creating that forum post! If there's anything else you need, I'm happy to help."
