Uncertainty of an extrapolation - Assitance required

We have an instrument that needs to measure temperature up to 300C in the field. For technical reasons we can calibrate this instrument only up to 100C and here is the data:

Reference - Actual

0C - 0.1C

45C-45.2C

65C-64.6C

88C-87.9C

100C-100.3C

Question is what is the uncertainty of the measurement for this instrument when measuring at 300C

The uncertainty would be how much the temperature would vary.

I don't know much but it seems what you would need to do is take the highest difference of the reference vs actual table and calculate the ratio between the reference and the actual and then apply it to 300.

I.E 0 - 0.1 has a 10% ratio difference. Meaning 300 would have an uncertainty of 30 (if 0 - 0.1 was the highest difference in uncertainty from the table).

Again, I am not sure how correct this actually is.
