Do you start off students with a full diagnostic test & then recommend a practice / studying plan that they follow using your work here?

Yes! If you haven't imported scores from an SAT/PSAT test you might have taken and uploaded them to CollegeBoard, the way to start practicing the SAT section is by taking a full diagnostic test and then following the recommended practice.

Also, please rely on the rest of Khan Academy to supplement your studies!
