Work is equal to the energy required to accomplish a task. When you throw a tennis ball in the air, your arm exerts a force on it. This force is enough to propel it upward against the pull of gravity. The work you do is equal to the force your arm exerts times the distance the force is acting over.

You do work only when in contact with the ball.
